One of the things I love about food blogging is that in order to get that good shot of the food it’s often necessary to take multiple bites out of the food plus I get to use the fancier china that otherwise would sit in the cupboard never to see the light of day.
Blueberry Oat Bran Muffins with Chia
I know I am probably late to the Chia is a superfood party but I have arrived now and am putting them in everything! One of the purported benefits of Chia is that they are high in Omega-3 fats which are great for the brain. However I have read conflicting opinions on that, with some reports stating that they’re in the incorrect form for you to absorb and use them well and we should stick to the fish oils for our source of Omega-3s. Still, throwing a spoon of these in your porridge every morning must be better than a spoon full of sugar! With that in mind I will continue to gleefully put them in everything I can think of.
These little babies are tiny and can hold up to 12 times their weight in liquid so you need to keep this in mind when using them in smoothies or baking.
The major components of these blueberry oat bran muffins with chia mean that they are a superb source of fibre to start your day with. It’s unfortunate with most muffins but these really do taste best fresh when the top is crispy and the insides moist and warm, however you can freeze them and once defrosted revive the top under the grill for a few minutes. Serve with your morning cuppa or pop in your bag for an on-the-go boost during the day.
The muffins are wheat and dairy free, ensure your oats and baking powder are certified gluten free if you are making these for someone with coeliac disease. There is very little added sugar in these, the sweetness comes from the berries and apples and the addition of a little maple syrup.
Ingredients for Blueberry Oat Bran Muffins with Chia
1 Cup of Apple Sauce (you could probably substitute 1 cup of mashed banana here without messing up the recipe much)
1 Teaspoon of Vanilla Extract
2 Tablespoons of Maple Syrup
1.5 Cups of Whole Oats, processed into flour (plus a little extra for sprinkling on top)
1/2 Cup of Oat Bran
2 Tablespoons of Whole Chia Seeds
1 Teaspoon of Baking Powder
1 Cup of Blueberries
Preheat your oven to 160C fan.
Beat the eggs and then add the apple sauce, maple syrup and vanilla extract and mix until very well combined.
Add the oats, oat bran, chia and baking powder and mix, the batter will be quite wet but those chia seeds will suck up some of that moisture. Fold in the blueberries.
Line a muffin tin with cases and spoon in the mixture, filling each case about 2/3 full. Sprinkle some whole oats on top. Put in the oven and bake for about 35 minutes until golden and springy to the touch.
