I was going to call this recipe simple hummus but after reading this post on hummus by the king of all things middle eastern I was too ashamed to. Not only does this recipe call for olive oil in the mix, it has no tahini and uses tinned chickpeas and so simple chickpea dip it is.
The perfect partner for some crunchie veggies, this simple chickpea dip can be made with ingredients you probably have to hand in your kitchen. It makes a perfect snack. Keep a little tub in the fridge, wash and chop your veg when you get home from the supermarket. Keep those close at hand too in a little container. I find it helps me to avoid the sweet treats when I’m craving something. Chickpeas are a great source of fibre and protein, they are a filling little addition to your diet at any time of the day.
Ingredients for simple chickpea dip
1 Tin of Chickpeas
2 Tablespoons of Olive Oil
1 Heaped Teaspoon of Ground Cumin
1 Clove Garlic
1 Tablespoon Lemon Juice
Note: Add some sundried tomatoes, roasted peppers or chilli to give this dip a kick.
Place all the ingredients in a good food processor and blitz them together until smooth and creamy. Place in a dish, drizzle with a little more oil, serve with crunchy veg. Carrots, peppers, mange tout, baby sweetcorn are all great.
