The Saturday Kitchen #1 – Eggs with Spinach and Salmon

This will be the first in what’s hopefully a series of posts featuring items that are not quite deserving of their own full recipe but might inspire a quick and healthy start to the weekend. Most of the ideas I’ll be posting on a Saturday will be brunch type ones, quick to put together but infinitely more enjoyable than a slice of toast and worthy of sitting at the table with the weekend papers.

First up is these baked eggs with spinach and smoked salmon. They take no more than 3 minutes to throw together and can be baked in the oven in 15 minutes while you make a cup of coffee and continue waking up.

Eggs with Spinach and Salmon

The beauty of baked eggs is that you can use whatever you have at hand. Use your imagination!

You will need: Spinach, sliced smoked salmon, eggs, cream or cream cheese (optional), parmesan cheese(optional). 1-2 eggs per person.

You can make these in any oven proof dish. Individual ramekins, casserole dishes, cast iron pan, whatever is handy. Grease your dish.

Line the base with leaves of baby spinach. I regularly buy bags of fresh spinach and keep in the freezer. They freeze really well and are perfect for topping a stew or putting in a smoothie. If your spinach is frozen, you can wilt it by microwaving for 20-30 seconds.

If you’re feeling it, dot some cream cheese around the spinach too. Or pour in a bit of cream if you happen to have it. Tear up your slices of smoked salmon and place strategically and artistically on top of the spinach. Make a couple of wells in the middle and crack open some eggs.

Season with salt and pepper and bake in the oven for 15 minutes at about 160C until the egg whites are set. Serve with freshly grated parmesan and toast. The weekend will be a good one if you start it like this!

    Yum! I am keeping away from carbohydrates at the moment and one of the things I miss deperately is bagels with egg, smoked salmon, and cream cheese. This looks like an awesome substitiute! 🙂
